If I were asked  what is the first ingredient that I think of when I think of Grandma's traditional Irish Home Cooking it would be the "potato" or as the Irish call them  "praties."  The potato originally came from South American and throughout history have provide a very nutritional staple at a very low cost.  In 1845, there was a fungus disease that hit the Irish potato crop,  which killed millions of people.  This forced over a million to emigrate.  A large number of these individuals came  to the United States to escape starvation.  I still find it amazing how many tasty dishes can be made from potatoes or basically there is nothing better than a piping hot baked potato loaded with butter, sour cream, cheese, real bacon bits, aand scallions.  My mother is from Irish descent so I guess that is why I absolutely love any foods that most likely originated in Ireland such as pastrami and corn beef.  I have admit the most delicious pastrami and corn beef on rye that I've ever had wasn't cooked at home but from Katz's Deli in New York.  My boyfriend and I have been on several occassions, imagine a true New Jersey Yankee and true Southern Girl together!  We have been known to sit in my kitchen at 3:30 AM when he came to visit and enjoy what seems like a mile-high pastrami sandwich.  However, with a little help from Grandma, we can creative a delicious sandwich as well.  Then, we have the delicious "fish and chips" and don't forget the malt vinegar and tangy tartar sauce.  And we must not forget our variety Irish Coffee that is perfect in the morning with a warm scone.  I guess when we think of Irish foods, the most popular are probably the food that we enjoy during St. Patrick's Day.  St. Patrick's Day was first celebrated in America in Boston, Massachusetts in 1737.   We celebrate the tradition of wearing green (or getting pinched by someone who did) and consuming green foods and libations.  Example are green eggs and ham and green beer.  So get started and try your "LUCK" on some of these delicious recipes.
