When it came to sturdy Greek Cooking,  these foods are  typical Mediterranean dishes that make use of olive oil, veal, lamb, poultry, fish, cheeses, grains and bread, and wine.  Now let me tell you about some of my favorite greek foods that some may classify as fair foods or greek fast food.  One of my favorite is Souvlaki or Gyros, which are meats, such as lamb, grilled on a skewer .  The meats are usually marinated in oil, salt, pepper, oregano and lemon juice.  They are served with warm pita bread and served with a delicious sauce called Tzatzik.  In the U.S., most Tzatziki is made from yogurt and cucumbers that have been pureed and strained or seeded and finely diced.  Garlic, salt, black pepper and often olive oil, dill, parsley or mint.  Another one of my favorites are Dolmathes or better known as stuffed grapevine leaves.  They are usually filled with rice and seasonings, then drizzled with olive oil.  Present in almost every dish, olive oil provides a very distinict flavor and a long-time element of Greek food. Olive trees are abundant throughout Greece. 

    Honey in Greece is mainly flower-honey from the nectar of fruit and citrus trees.  A favorite pastry/dessert made with honey is Baklava.  It is made with layers of phyllo pastry, honey, nuts, sugar, syrup, cloves.  Now, let's talk about my favorite cheese used in Greek dishes.  Feta is an aged cheese, usually found in blocks, with somewhat of a salty taste.   It is used as a table cheese, but is great in a greek salad with pepperconics and assorted olives.  But the most popular dishes that feta is used in is Spanakopita ("spinach pie") and Tyropita ("cheese pie").  I must not forget one of my favorites, zesty hummus and warm pita bread.  But let's not forget the greek salad.  Made fresh salad greens, juicy tomatoes, mixed olives, fresh feta cheese, fresh herbs and oil and vinegar.   Not only is it delicious but it is very good for you!
